Pestèda is Grosio’s most iconic seasoning, an aromatic blend that transforms everyday dishes into flavourful experiences. Especially suited for pizzoccheri, it’s also great with vegetables, meats, soups, and other local specialties.
Its name comes from the traditional preparation method—pestata, or pounding—of garlic, salt, pepper, dwarf yarrow leaves (known locally as girupina), and wild thyme (peverel), all gathered from the Valgrosina. Passed down through generations, each Grosio family has its own variation, sometimes adding wine, brandy, grappa, or juniper berries for an extra touch of personality.
To protect this heritage, Grosio is home to the Confraternita Amici della Pestèda, a local guild that organizes an annual contest to crown the best family-made blend. Pestèda isn’t just a seasoning—it’s a vital part of the town’s cultural identity.
